If you are local to the Canberra region, we can make fresh koji or koji products to order.

We are making handmade miso, which will be available for sale once it has matured.

  • Fresh koji to order, suitable for many culinary applications. Sold by the kilogram. Several days notice is required to grow the koji.

    Shio koji and amazake are available by the litre. Production time will vary by order size.

    Miso takes several months at a minimum to mature, but can be produced to order.

  • Fresh koji has a limited shelf life at room temperature.

    It will last for several weeks when refrigerated and vacuum sealed, but is not suitable to be sent at room temperature in the post.

    Dehydrated koji is very stable and safe to post.
